fiesta
What I really want to do is go to El Paso and eat the most wonderful Mexican food!
But since I think that's out I am thinking about having a Mexican Fiesta.
My first problem with this is that if I were to have this fiesta, I would like to invite a lot of people. And I do not have a lot of space. I also do not have a lot of space for the cooking. Or a deep fryer. So it maybe be awhile before my fiesta.
In the meantime I will just have to eat enchiladas at Taco Del Mar.
On the note of El Paso, someone pointed out to me the other day that I seem to like border towns. I have lived in two now.
Anyways, recently I have been feeling that I should "get involved" with something. Most of my life is taken up by work and with my erratic schedule I find it hard to commit. But I want to do something.
One of the girls that I met at the museum has asked me to be the judge of photography portion of her 4-H club. That will be in April and I quite excited about it. It means that first of all she thinks I am good enough to judge and it is community involvement. And it's only one day! So even I can handle that level of commitment!
The museum has also suggested to me that I should teach a photography course through them. The problem with this one is that it wouldn't be until September. And that is a commitment. Considering I don't know if my paper will make it through the recession. Or if the recession ends if I will even still be here, I would want to be off to bigger and better things!
I do want to teach though, I think I could be good at it. But the last thing I want is more competition running around town! So we will have to wait and see for that one.
I also really want to learn a new skill. Like cake decorating or something like that.
So if you have any suggestions for "getting involved" I would love to hear about them. So maybe something you do or something like that.
I would also like to say that minus the "I Kissed a Girl" song I really like the Katy Perry cd. A very good listening experience!

oh a class would be fun! How did you get involved with the museum so much? Through work?
As for the Fiesta - you just gotta do it sometimes! Don't let your living situation (ie, small apartment) hold you back! You won't regret it!

Salsa:
2 squeezed key limes
2 tomatoes diced
a handful of white onion - diced
cilantro chopped - add as much as you want (bout 1 heaping tbsp)or more
Mix all together in a bowl and serve!

Thanks for the recipe! I will have to give it a try sometime...minus the cilantro part! To me cilantro tastes like dirty feet!
I will defiantly let you know when I have my fiesta! It maybe awhile still! My place is small. So I will have to clean (a lot) first!
hahah...the "i don't want competition" thing reminds me of an episode of Friends i saw today where joey was teaching soap opera acting & ended up losing a role to one of his students, after trying to sabotage the guy by telling him to "act it gay." and my suggestion for new skills/involvement is this: learn how to decorate a delicious mexican dish to look like a cake and then bring it to me (listening to katy perry in the car on the way here of course). ALL IN ONE! i am the queeeeeeen of conveeeenience!
